. White Organic spelt can be used anytime a recipe calls for all purpose flour. Spelt and wheat have a similar nutritional profile so should be avoided if you are on a gluten free diet. It is nutritious and contains small amounts of vitamins B1, B6 and E as well as small amounts of calcium and selenium.
