Organic Wholemeal Rye Flour is the whole rye grain gently ground in a stone mill. Stone milling tempretures are lower than rollermilled flours so more of the nutrients are retained. As with all wholemeals 5% of the bran and germ are removed. If you are looking for a flour with all the bran and germ retained you need to look for a wholeGRAIN flour . Rye flour has a distinct flavour profile and gives a darker baked product than wheat flour. Rye flour has a lower gluten content than wheat flour and is used extensively as a sourdough starter.
