This organic Light Rye Australian flour makes a delightful rye bread when mixed with a white flour to give a wonderful delicate rye flavour. A LIGHT rye refers to the fact that the bran has been removed from the flour. Rye flour has a weak gluten so tends not to rise as much on its own. You can add Vital Gluten (which is available from us at a rate of 1%. You will need to increase your liquids by the same amount of 1%)
